- Heat the deep fat fryer to 170c.
- 1 Sieve the flour and salt into a large bowl. Make a well in the centre to break the egg into.
- 2 Add in half the beer and whisk to create a smooth batter. Gradually whisk in the remaining beer and soda water. Leave to rest. Heat 1" oil in a large saute/fry pan.
- 3 For the Boxty: Grate the remaining potato and onion and squeeze in a clean tea-towel to remove excess moisture. Place in the bowl with the mashed potato.
- 4 Break the egg into a small dish, beat and add in to the potato mix. Add in 2-3 tbsp flour, season and mix well.
- 5 Drop spoonfuls of the mix into the saute/fry pan and shallow fry for 3-4 min on each side, till golden and crispy.
- 6 For the Salad: Shred the lettuce and place in a bowl with the watercress.
- Deseed the pepper and slice lengthways. Add in to the bowl of salad.
- 7 For the Prawns: Remove the head, shell and tail. Dip each prawn in the flour and batter, and deep fry for 3-4 min, turning once during cooking.
