Receta Seafood Cakes With Creamed Tomato, Herb And Garlic Sauce

Ingredientes

  • 1/2 lb shrimp - (any size) peeled, deveined
  • 1/4 lb lobster meat
  • 1/4 lb columnar cleaned
  • 1/4 lb white fish (bass, grouper, cod, halibut)
  • 1 c. finely-minced mixed peppers (warm & sweet)
  • 1/2 c. finely-minced mixed onions
  • 1/4 c. finely-minced shallots
  • 1 tsp minced garlic
  • 1 Tbsp. minced parsley
  • 1 Tbsp. minced cilantro
  • 1 x egg
  • 1 1/2 c. bread crumbs
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Clarified unsalted butter for frying
  • 1 1/2 c. heavy cream
  • 2 Tbsp. minced shallots
  • 1/2 c. peeled, seeded, minced ripe tomatoes
  • 2 tsp minced garlic
  • 2 Tbsp. minced fresh herbs - (tarragon, basil, cilantro, marjoram, chives, etc.)
  •     Juice of 1 lime
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 4 ounce unsalted butter room temperature

Direcciones

  1. Dry and chop seafood very fine. Mix with rest of ingredients. Form into 16 oval patties. Pan fry in clarified butter till golden.
  2. Herb Garlic Sauce: In sauce pot, saute/fry shallots till transparent. Add in garlic and stir. Add in tomatoes and cook for approximately one minute. Add in half of mixed herbs and cream. Simmer till reduced by half or possibly till desired consistency. Add in lime juice and remainder of herbs. Season with salt and pepper and finish by gradually adding the butter.
