Receta Sesame Noodles With Cucumbers And Shredded Chicken

- 1/2 c. Chinese sesame paste or possibly tahini
- Â Â (can also substitute creamy peanut butter)
- 1 Tbsp. Sesame oil
- 1/4 c. Canola oil
- 1/2 c. Rice wine vinegar
- 2 x Serrano chiles de-stemmed
- 2 x Garlic cloves
- 1/3 c. Basil leaves
- 1 bn Minced scallions
- 1/3 c. Mint leaves
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 1 lb Angel hair pasta blanched, refreshed
- 2 x English cucumbers julienned
- 2 c. Shredded chicken from
- 1 whl Roasted Chicken see * Note
- 1 x Red bell pepper finely diced,
- Â Â for garnish
Direcciones
- In a food processor, mix sesame paste, oils, and vinegar. Add in chile, garlic and herbs and puree till smooth. Season with salt and pepper.
- In a large mixing bowl toss pasta, cucumbers and chicken with dressing. Check for seasoning and garnish with red bell peppers and basil/mint leaves.
- This recipe yields 4 servings.
