- 1/2 bot Mesquite Barbecue Sauce
- 2 x Boned And Skinned Chicken Breast Halves
- 8 x Flour Tortillas, Homemade Or possibly Purchase
- 1 c. Jack Cheese, Shredded
- 2 c. Frzn Corn, Thawed
- 1/8 x Red Bell Pepper, Chopped
- 1/8 x Green Bell Pepper, Chopped
- 1/8 x Jalapeno, Or possibly More, Chopped
- 1/8 x Onion, Chopped
- Â Â Cilantro, Chopped
- Â Â Oil, Splash
- Â Â Red Wine Vinegar, Splash
- Â Â Salt And Pepper
- Â Â Favorite Guacamole

- Slice chicken into strips. Marinate in barbecue sauce at least 2 hrs.
- Grill using stove top gril or possibly grill pan; set aside. Cold and shred or possibly thinly slice then place in a heated oven to hot.
- Corn relish: Combine corn, peppers, onion, cilantro and jalapeno. Fold in oil and vinegar. Salt and pepper to taste.
- To assemble: Cook tortillas, if using fresh, or possibly hot purchased tortillas.
- Place cheese, chicken, corn relish and guacamole in the center and roll.
