Receta Slow-cooker Beef Stew from Argentina

I slightly adapted thie famous Argentine beef stew to be slightly more flavorful...and thus to my liking. The extra cumin seeds, paprika, cayenne, salt and pepper don't take away from the flavor of the meat and vegetables, but they give an added kick that makes this classic family stew extraordinary. We had it at our family reunion, and everyone raved. I hope you enjoy it!

  1. In a large skil. let, cook the bacon until crisp. Remove bacon, reserving drippings, and dry on paper towels. Crumble bacon and reserve until serving time. Brown beef, one half at a time, in the pan. Drain off fat.
  2. In a large slow cooker place all vegetables (execpt cabbage) and all spices (except fresh Thyme if using). Add meat. Pour broth over all.
  3. Cover and cook on low-heat for 8-10 hours, or on high heat for 4-5 hours.
  4. If using low, turn to high. Stir in the cabbage and fresh Thyme (if using). Cover and cook for an additional 15 minutes, or until cabbage is tender.
  5. Serve in bowls, sprinkling each with crumbled bacon.

      This was an excellent beef stew. While I didn't like it quite as much as John's Georgian Beef Stew, the plentiful variety of vegetables made it a tasty and pretty healthy for a beef stew. Worth a try this Fall/Winter for sure.

          This sounds excellent and looks delicious! I just bought a new slow cooker after many years of not having one so this is a great recipe to try in it. Bacon is the perfect touch to complement the flavors!

            I don't know what the original recipe looked like, but this one looks flavorful and very unique. I would definitely enjoy this when the autumn season hits where I live-- which usually isn't until October. Saving for the future...

              Ooh, John, I've just saved this in my Slow Cooker recipe tome. I'm growing my own carrots, tomatoes, pumpkins, and cabbages, among other things, so hopefully this stew will make a harvest-laden dinner for us come fall!

                John, this looks delish, and very close to some of the Indian flavors I cook with.
