Receta Sopa De Tortillas (Tortilla Soup)

Ingredientes
- 8 x Tortillas
- 2 Tbsp. Extra virgin olive oil
- 1 x Clove of garlic
- 1 c. Tomato puree
- 1 x Onion, minced
- 1 Tbsp. Freshly minced parsley
- 1 tsp Chili pwdr
- 1 x Bay leaf
- 2 c. Water
- 1Â 1/2 Tbsp. Grated cheese
Direcciones
- Cut tortillas in narrow strips with scissors and set aside to dry. Heat oil in casserole. Cook garlic clove in oil till burned black and remove. Brown tortilla strips in oil and add in tomato puree, onion, parsley, chili pwdr, bay leaf, and 2 c. water. Simmer for about 15 min or possibly till tortilla strips are soft and soup is almost dry. Sprinkle grated cheese on top.
