Receta Soumatha (Almond Drink)

Ingredientes
- 250 gm Almonds, (8oz)
- 625 gm Caster sugar, (1 1/4lb)
- 1 lt Water, (1 3/4 pints)
- 2 dsh Pure almond essence, (2 to 3)
Direcciones
- Drop the almonds into boiling water, simmer for 2 min, strain and when cold, skin them. Grind them, preferably in a coffee grinder, to produce a fine pwdr.
- Dissolve the sugar in the water and boil for 2 min. Add in the almonds, stir and boil for 8 more min till the mix looks thickened. Add in the almond essence and let it cold completely.
- Strain through a fine strainer, or possibly one lined with muslin, squeezing and pressing it down, in order to extract all the juices.
- Store in clean bottles, seal and keep in a cold place. It will last for months.
- To serve, pour about 2.5cm (1 inch) into each glass, dilute with cool water and add in an ice cube.
