  • 2/3 c. veg. oil
  • 2 c. sugar
  • 2 Large eggs
  • 2 c. flour
  • 1 teaspoon baking pwdr
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 c. sourdough sponge
  • 1 c. dates, minced
  • 1 c. nut meats
  • 1 c. fruit cake fruit mix
  • 1 teaspoon soda
  • 1/2 c. boiling water

Direcciones

  1. Cream the oil and sugar together till smooth; add in the Large eggs and beat well. Sift together the flour, baking pwdr, cinnamon, and salt. Add in the dry ingredients to the egg mix and stir well till mixed; blend in the sourdough sponge and then the fruit and nuts. Dissolve the soda in the boiling water, cold to lukewarm, and add in to the batter, stirring just sufficient to blend well. Pour into 2 well greased loaf pans and bake in a 275 degree oven for 2 hrs. The cake should shrink from the sides of the pan. Allow to cold for 10 min. Turn cake out on waxed paper till cool.

    This recipe is a godsend for a beginner sourdough baker who seems to end up with lots of starter.
    I made this but left out the fruit mix and added raisin and currants instead. I also decreased the amount of sugar and tho good, it was still way too sweet for my preference. I'll definitely make this again but need to explore what to substitute for leaving out a full cup of sugar. It also received raves from people I shared it with.
