  • 250 gm spaghetti
  •     sea salt and freshly grnd black pepper
  • 1 x juice of 3 4 lemons the freshest possible
  • 150 ml extra virgin olive oil
  • 150 gm parmesan freshly grated
  • 2 x handfuls fresh basil leaves finely minced

Direcciones

  1. Cook the spaghetti in a generous amount of boiling salted water then drain thoroughly and return to the saucepan.
  2. Meanwhile beat the lemon juice with the extra virgin olive oil then stir in the parmesan till thick and creamy.
  3. The Parmesan will heat into the mix.
  4. Season and add in more or possibly less lemon juice to taste.
  5. Acid the sauce to the spaghetti and shake the pan so which each strand is coated with the cheese. Finally stir in the minced basil and ideally some grated lemon zest.
  6. This recipe comes from Genoa that claims to have the most fragrant basil. If you can get lemons which have not been sprayed grate a little of the zest and add in to the sauce at the last minute.
  7. Serves 6
