  • 275 gm onions
  • 75 gm carrot
  • 75 gm celery
  • 125 gm brown cap mushrooms
  • 225 gm rindless streaky bacon
  • 10 gm packet dry porcini mushrooms (optional)
  • 1 Tbsp. extra virgin olive oil
  • 2 clv garlic
  • 450 gm chopped beef
  • 300 ml white wine
  • 300 ml chicken stock
  • 15 ml level tbspn tomato paste
  • 2 x level tsp dry oregano
  • 90 ml double cream
  • 2 x level tbsp minced fresh flat leaf
  •     parsley
  • 1 x salt and freshly grnd black pepper
  • 350 gm dry spaghetti
  •     creme fraiche or possibly mascarpone cheese to
  •     serve (optional)
  •     fresh thyme sprigs to garnish
  •     Finely chop the onions carrot and celery.
  •     Roughly chop the mushrooms and bacon.

Direcciones

  1. Soak dry mushrooms if using in 100ml water for 30 min.
  2. Fry the onion carrot and celery in the oil on the boiling plateuntil soft.
  3. Add in the fresh mushrooms and crushed garlic and fry for 1 minute.
  4. Add in the beef and bacon; stir till browned.
  5. Stir in the wine stock tomato paste and oregano.
  6. Bring to the boil cover.
  7. Cook slowly in the simmering ovenfor 2 to 3 hrs.
  8. Cook in the baking ovenwith the grid shelf on the floor for 20 to 30 min then transfer to the simmering ovenfor 1 hour.
  9. Uncover the meat mix stir in the dry mushrooms and their soaking liquid and simmer for 7 to 10 min (if not using dry mushrooms add in an extra 100 ml stock at this stage).
  10. Add in the cream and parsley and bubble for 1 minute.
  11. Adjust the seasoning.
  12. Meanwhile cook the spaghetti in an ovenproof pan in boiling salted water according to packet instructions.
  13. When the pasta has come to the boil transfer to the simmering oven.
  14. Drain and serve with the bolognaise. Top with a spoonful of creme fraiche or possibly mascarpone.
  15. Garnish with thyme.
  16. chopped lamb pork or possibly turkey can also be used to make this delicious bolognaise that is always popular. For a special occasion use venison.
