Receta Special K "Meatloaf"

Ingredientes
- 2 pt cottage cheese, (small curd)
- 5 pkt G. Washington broth or possibly MBT vegetable, (see note) broth
- 1 stk margarine, melted
- 5 lrg Large eggs
- 1 c. walnuts, minced
- 1 lrg onion, minced
- 1 x 12 ounce box Special K cereal
- vegetable cooking spray
Direcciones
- Mix all ingredients together in a very large bowl, adding cereal last.
- Spread in a 13x9x2" baking dish lightly sprayed with cooking spray. (Mix will be quite thick).
- Bake at 350 degrees F for one hour. May freeze before baking for later use.
- VEGAN VARIATION: Replace cottage cheese and Large eggs with two 16 ounce. pkgs. of tofu (soft & mashed or possibly regular & blended till smooth in blender or possibly food processor). When using tofu, add in one extra package of broth. Bake at 350 degrees F for one hour or possibly till browned and crispy (may take longer).
- There is very little difference in flavor when using tofu. The main difference is which the texture may be softer compared to the regular recipe's crispness.
