Receta Spicy Spam Kabobs

Ingredientes
- 1/4 c. lemon juice
- 3 Tbsp. chopped onion
- 1 Tbsp. extra virgin olive oil
- 1 tsp dry leaf thyme
- 1 x garlic clove chopped
- 1/2 tsp whole oregano leaves
- 1/4 tsp red pepper flakes
- 16 x pea pods
- 1 can pineapple chunks packed in light juice
- 1 can Spam Lite luncheon meat - (12 ounce) cut into 24 cubes
- 1 x red bell pepper cut into 1" pcs
- 4 c. warm cooked rice
Direcciones
- Combine first 7 ingredients in a 9- by 12-inch dish. Wrap pea pods around pineapple chunks. Alternately thread Spam cubes, pineapple chunks and bell pepper pcs on 8 skewers. Place in dish with marinade. Cover and marinate 2 hrs, turning occasionally.
- Grill kabobs over medium-warm coals 10 min, turning occasionally. Or possibly broil 5 inches from heat source 8 to 10 min, turning occasionally. Serve with warm cooked rice.
