Receta Steamed Asparagus With Mustard And Caper Vinaigrette

Ingredientes
- 12 lrg asparagus spears
- Â Â Water as needed
- 1 Tbsp. low-fat mayonnaise
- 2 tsp Dijon mustard
- 1 Tbsp. rice vinegar
- 1 Tbsp. chicken or possibly vegetable broth
- 1/2 tsp lemon juice
- 1 tsp roughly minced capers
- 1 tsp chopped chives
- Â Â Salt to taste
Direcciones
- Peel lower half of asparagus stems using potato peeler. Steam asparagus spears in steamer over boiling water till asparagus is just tender, 10 to 12 min.
- While asparagus steams, whisk together mayonnaise and mustard in small bowl. Whisk in rice vinegar, broth and lemon juice till smooth. Stir in capers and chives. Add in salt to taste.
- Drizzle vinaigrette on top of asparagus or possibly serve as dip.
- Makes 4 servings.
