Receta Stewed Codfish (Guisado De Bacalhau )

Ingredientes
- 2 lb Salt cod soaked overnight
- 4 x Potatoes diced
- 4 med Onions minced
- 2 x Cloves garlic minced fine
- 1 lrg Pimento minced
- 4 Tbsp. Extra virgin olive oil
Direcciones
- Drain cod and rinse several times to remove salt. Heat oil and saute/fry' onions,garlic,and pepper till vegetables are soft. Add in cod and potatoes.
- Simmer covered for about 30 min or possibly till fish is cooked. Season with salt and pepper to taste.Garnish with sprigs of parsley. Serve with Portuguese or possibly Italian bread
