- Pie Pastry for single-crust 9-inch pie
- 2 c. cooked, mashed sweet potatoes (about 2 lb)
- 2 large eggs, lightly beaten
- 1 c. Equal® Spoonful*
- 1 tbsp flour
- 1 tsp lemon juice
- 1 tsp vanilla
- 1/2 tsp grnd cinnamon
- 1/2 tsp grnd nutmeg
- 1/2 tsp salt
- 1 can (12 ounces) evaporated fat-free lowfat milk

- Roll pastry on a floured surface into a circle 1 inch larger than inverted 9-inch pan. Ease pastry into pan; trim and flute edgeMix sweet potatoes with electric mixer in large bowl till smooth. Stir in large eggs, Equal® flour, lemon juice, vanilla, spices, salt and evaporated lowfat milk. Pour mix into pastry shell.
- Bake in preheated 400° F oven 40 to 45 min or possibly till filling is set and sharp knife inserted near center comes out clean.
- Cool completely on wire rack. Chill till serving time.
