Receta Tequila Shrimp Shrimp With Tequila Citrus Sauce

Ingredientes
- 8 x jumbo shrimp peeled and deveined
- 2 Tbsp. unsalted butter (I subbed extra virgin olive oil)
- 3 ounce tequila
- 1/4 tsp chopped garlic
- 1/4 tsp grnd black pepper
- 1Â 1/2 x oranges juiced
- 2 x limes juiced
- 3/4 c. heavy cream (i omitted)

- 1. Heat butter in medium saute/fry pan till warm. Add in shrimp and cook on both sides till slightly undercooked. Add in garlic and reduce heat to medium.
- 2. Stand back - add in tequila and let flame for 30 - 45 seconds.
- 3. Add in orange and lime juices, salt and pepper.
- Reduce for 1 - 2 min. Add in cream and let boil till reduced to a thick sauce.
- NOTESI found it best to remove the shrimp after adding the citrus juices. Otherwise, they were overcooked by the time I'd reduced the sauce.
- Next time I try this one, I'll give it a go and try a non-fat skim/soy/rice substitution. If anyone gets a chance to try this, let me know how it turns out and if the cream ends up curdling. [Bernie]
