Ingredientes
- 1 x Chicken carcase, weighing approximately 375g (12oz)
- 2 piece lemon grass
- 2 x Lime leaves, (optional)
- 1 sm Green chilli
- 2 sm Red chillies
- 1 med -size onion, unpeeled and quartered
- 1Â 1/4 lt Cool water, (2 pints)
- 2 x 175 g, (6oz) skinless, boneless chicken breasts, minced or possibly shredded
- 1Â 1/2 x Limes, juice of
Direcciones
- Place the chicken carcase in a large saucepan with 1 piece of lemon grass, 1 lime leaf if using, the chillies and onion.
- Cover with the water and bring to the boil.
- Reduce the heat and simmer for 30 min.
- Remove the pan from the heat and allow the stock to become completely cool.
- Strain the stock, then refrigerateovernight.
