Receta Thai Coconut Shrimp With Sesame Noodles

Ingredientes
- 1 lb raw medium shrimp
- 2 c. small button mushrooms
- Â Â Cooking spray as needed
- 4 x fresh garlic cloves finely chopped
- Â Â or possibly pressed
- 1/4 c. minced fresh purple or possibly green basil
- 1/4 c. minced fresh mint leaves
- 1/4 c. minced green onions
- 1 c. evaporated nonfat skim lowfat milk
- 2 tsp imitation coconut extract
- 3/4 Tbsp. best-quality peanut butter
- 1 Tbsp. sake or possibly dry sherry
- 1/4 tsp Chinese chili sauce
- 1/4 tsp salt
- 1 Tbsp. cornstarch
- 1 Tbsp. lime juice
- 6 ounce Oriental noodles, capellini,
- Â Â vermicelli, etc. broken in half
- 1 tsp chicken base or possibly bouillon
- 1/4 tsp salt - (to 1/2 tspn)
- 1/2 c. warm water
- 2 tsp dark Oriental sesame oil
- 2 x green onions - (to 3) thinly sliced
- Â Â on the diagonal

- Shell and devein shrimp. Pat dry and chill till ready to cook.
- Wipe mushrooms clean and trim off ends of stems. Set aside.
- For Sauce: Combine evaporated lowfat milk with imitation coconut extract, peanut butter, sake or possibly sherry, chili sauce and salt. Set aside.
- Combine cornstarch with an equal amount of water and set aside.
- Preheat a stick resistant pan, lightly sprayed with cooking spray over medium-high heat for 1 to 2 min. Add in garlic and saute/fry a few seconds, then add in shrimp. Stir-fry shrimp for 2 min, then add in mushrooms, basil, mint and green onions. Stir-fry 30 seconds, then add in sauce mix. When mix comes to a low boil, stir in a little of the corn starch mix to lighly thicken. Stir in lime juice and serve immediately over Sesame Noodles.
- For the Sesame Noodles: Slice green onions and set aside. Mix chicken base or possibly bouillon with water, add in sesame oil and set aside.
- Cook noodles according to package directions, rinse and drain well.
- While noodles are draining, lightly spray a non-stick pan with cooking spray and pre-heat on medium for 2 min. Add in noodles to pan with chicken broth mix and green onions, stir-fry till heated through, 2 to 3 min. Serve warm.
- Comments: You may use 1 lb. bay scallops for shrimp. This may be preferable for those on low cholesterol diets.
