  1. Rinse beans, combine with 8 c. of water in large soup pot. Bring to boil, cover and remove from heat, let stand 1 hour. Add in seasonings and tomatoes. Bring to boil, reduce heat and simmer, covered for 2 hrs. Slice sausage, add in to soup. Simmer 30 min longer adding a small amount of water if needed. May substitute 1 lb. of ham for sausage. Yields: 2 1/2 qts.
