- 1 1/2 c. sliced steamed green beans
- 1/2 c. diced celery
- 1/4 c. diced red onion
- 1/4 c. diced pimento
- 1/4 c. minced parsley
- 2 tbsp. natural rice vinegar
- 1 tbsp. lemon juice
- 4 teaspoon extra virgin olive oil
- 1/4 teaspoon each and salt and pepper
- Lettuce leaves
