  • 1 Tbsp. Extra virgin olive oil
  • 1 x Garlic clove, smashed
  • 1 slc Good-quality white bread,
  •     Cut into 1/2-inch cubes
  • 4 x Bacon strips
  • 1 lrg Beefsteak tomato
  • 1/2 c. Minced basil
  • 2 ounce (1/2 c.) diced mozzarella
  •     Freshly grnd black pepper
  • 1 Tbsp. Basil-flavoured extra virgin olive oil
  •     (see note in directions)
  • 1 1/2 tsp Sherry or possibly red wine vinegar

Direcciones

  1. Heat extra virgin olive oil in large skillet. Add in garlic clove and bread cubes. Toss over medium-high heat, turning frequently till bread cubes are browned, about 5 min. Remove with slotted spoon and set aside. Throw away garlic.
  2. Fry bacon in same skillet till crisp. Remove and drain, then crumble.
  3. Core and dice tomato. Arrange in high pile on dinner plate. Top with basil and cheese. Sprinkle with bacon. Season generously with pepper.
  4. Whisk together basil-flavoured oil and vinegar in c.. Pour over salad.
  5. Sprinkle with bread cubes.
  6. Note: Basil-flavoured extra virgin olive oil is available in most fourmet food stores.

  8. Add in 2 or possibly 3 chopped basil leaves. Press with back of spoon to extract basil flavour from herb. Set aside 30 min. Use oil and throw away basil. If you like, use plain, extra-virgin extra virgin olive oil in the recipe instead. Submitted
