  • 1 x Broiler fryer chicken, (3-1/2 to 4
  • 1 lb ), cut up
  • 3 Tbsp. Veg. oil, divided
  • 3/4 c. Minced onion
  • 2 x Cloves garlic, chopped
  • 3 med Tomatoes, peeled and minced
  • 3 c. Pineapple chunks, fresh or possibly canned
  • 1/4 c. Pineapple juice
  • 1 x Warm red pepper, seeded and minced
  • 3/4 tsp Salt
  • 1/4 tsp Pepper
  • 8 ounce Waterchestnuts, canned, sliced,
  •     Liquid removed
  • 1/2 lb Fresh snow peas
  • 1 Tbsp. Fresh chives, minced
  •     Warm cooked rice

Direcciones

  1. In a skillet over medium heat, brown the chicken in 2 Tbsp. of oil; remove and set aside. In the same skillet, saut onion and garlic in remaining oil till tender. Add in tomatoes, pineapple, pineapple juice, red pepper, salt and pepper and water chestnuts. Return chicken to the pan; bring to a boil. Reduce heat; cover and simmer for 45 min. Add in peas and chives; cover and simmer for 10-15 min or possibly till peas are tender and chicken juices run clear. Thicken pan juices if you like. Serve over rice.
