  • 1 1/2 c. all purpose flour
  • 1/2 c. sugar
  • 1 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/3 c. lowfat milk
  • 1 c. whole bran cereal
  • 1/2 c. old-fashioned or possibly quick oats
  • 3 tbsp. vegetable oil
  • 1 lg. egg
  • 2/3 c. minced dates

Direcciones

  1. Heat oven to 400 degrees. Spray 12 muffin pan c. with non-stick cooking spray. Mix flour, sugar, baking soda, and salt in a medium bowl. In a large bowl, stir lowfat milk, bran cereal and oats. Let stand 2 min to soften. Beat in oil and egg. Stir in flour mix just till moistened. Mix in dates. Fill prepared muffin c. 3/4 full. Bake 15 to 18 min till tops are golden and a toothpick inserted in center comes out clean. Serve hot or possibly cold on wire racks. Makes 12.
