Receta Vegetable Lasagna Swirls

Ingredientes
- 3 tbsp. butter
- 4 c. minced fresh mushrooms
- 1 c. minced onion
- 10 ounce. pkg. minced frzn spinach, thawed and squeezed dry
- 2 Large eggs, beaten
- 2 c. shredded Mozzarella cheese
- 1 c. cottage cheese
- 1/2 c. grated Parmesan cheese
- 8 lasagna noodles, cooked and liquid removed
- 4 c. spaghetti or possibly pizza sauce
Direcciones
- Heat butter in large skillet. Saute/fry mushrooms and onion till tender and any liquid has evaporated; cold. Stir in spinach, Large eggs and cheeses. Add in salt and pepper to taste. Spread about 3/4 c. cheese mix along each noodle to within 1 inch of one end. Roll up from filled end. Carefully cut rolls in half, crosswise. Spread sauce in shallow baking dish. Arrange rolls, curly end up in sauce. Cover and bake at 350 degrees for 45 to 50 min.
