Receta Almond Citrus Salad

Ingredientes
- 2/3 c. vegetable oil
- 2 tsp grated grapefruit rind
- 1/2 c. fresh grapefruit juice
- 1 env Italian salad dressing mix - (0.7 ounce)
- 3 x grapefruits peeled, sectioned
- 4 x oranges peeled, sectioned
- 1 pkt baby spinach - (6 ounce)
- 1 pkt mixed salad greens - (14 ounce)
- 2 x celery ribs sliced
- 1 x green bell pepper minced
- 2 x avocados (optional),peeled and sliced
- 1 c. sliced almonds or possibly pecan pcs
- 1 Tbsp. butter or possibly margarine melted
- 1 1/2 tsp sugar
- 1/4 tsp grnd cumin
- 1/4 tsp chili pwdr
- 1/8 tsp dry crushed red pepper
- 1 pch salt
Direcciones
- Whisk together first 4 ingredients; chill, if you like.
- Combine grapefruit, next 5 ingredients, and, if you like, avocado in a large bowl. Add in dressing, tossing to coat. Sprinkle with Sweet-and-Spicy Almonds.
- For Sweet-and-Spicy Almonds: Stir together almonds and butter in a small bowl. Combine sugar and remaining ingredients; sprinkle over almonds, tossing to coat. Spread on a lightly greased baking sheet. Bake at 325 degrees, stirring occasionally, for 15 min. Cold. (Makes 1 c.)
