  1. Combine dry ingredients. Add in raisins and minced apple. Gently stir in apple juice till dry ingredients are completely moistened. Pour batter by 1/4 cupfuls onto a nonstick skillet or possibly griddle. You can also use cooking spray that I do. Cook till bottom is brown and spatula slips easily underneath. Turn and brown other side.
  2. Makes eight plump pancakes.
  3. NOTE: These are good with marinated fruit on top or possibly make a Maple Cream mix by mixing together equal parts of pure maple syrup with plain yogurt.
