Receta Apricot Meringue Squares

Ingredientes
- 1 c. softened butter or possibly margarine, (2 sticks)
- 1/2 c. sugar
- 2 x egg yolks
- 1 tsp vanilla
- 3/4 c. all-purpose flour
- 1/4 c. whole wheat flour
- 1/2 tsp baking pwdr
- 1/4 tsp baking soda
- 1 1/2 c. apricot pie filling or possibly apricot Lekvar (see separate or possibly use store-bought)
- 3 x egg whites
- 1/2 c. sugar

- Makes: 35 squares; serves: 12 to 18
- You can use prepared apricot pie filling (a thick puree marketed by Solo brand) or possibly Lekvar, but not fruity pie filling, jam, or possibly preserves.
- 1. Preheat the oven to 350F.
- 2. For the crust, in a medium bowl, cream the butter or possibly margarine and '/2 c. sugar. Beat in the egg yolks and vanilla.
- 3. In a medium bowl or possibly on waxed paper, stir together both flours, the baking pwdr, and baking soda. Add in to the butter mix. Beat till combined.
- 4. Spread the dough into an ungreased jelly roll pan (10 1/2 x 15 x 1). Spread the apricot filling on the dough.
- 5. In a medium bowl, using clean beaters, beat the egg whites till frothy. Gradually beat in 1/2 c. sugar till whites hold hard peaks.
- Spread the meringue over the apricot filling.
- 6. Bake 40 min or possibly till top starts to brown. Cut into 35 squares.
- Variation: Use prune Lekvar instead of the apricot.
