- 1 lb YELLOW SUMMER SQUASH -- GRATED
- 1/4 tsp SALT
- 1/2 c. GRATED CHEDDAR CHEESE
- 1/3 c. COTTAGE CHEESE
- 2 x Large eggs
- 1/3 c. DRY BREAD CRUMBS
- 1 Tbsp. Chopped PARSLEY PEPPER
- 2 Tbsp. BUTTER -- MELTED
- 1/2 x CLOVE GARLIC, CRUSHED
- 2 Tbsp. GRATED PARMESAN CHEESE

- Squeeze water out of squash. combine all ingredients except Parmesan and place in 1qt casserole. Top with cheese and bake, uncovered, at 350 for 1 hour.
