Receta Baby Latkes With Dried Apple And Cherry Sauce

Ingredientes
- 1/2 c. dry apples diced
- 1/2 c. dry cherries minced
- 1 1/2 c. boiling water
- 1 Tbsp. extra virgin olive oil
- 1 sm onion, finely diced
- 1 c. peeled and diced mutsu apples
- 1/4 c. white wine
- 1/4 c. white wine vinegar
- 1 pch cayenne pepper Potato Latkes
- 1 1/2 lb Yukon Gold potatoes
- 1/2 x onion, peeled
- 2 Tbsp. flour
- 1 lrg egg, beaten
- 1 1/2 tsp baking pwdr coarse salt and freshly cracked black pepper
- 1 bn chives, minced
- 8 c. vegetable oil, for frying
- 1 c. lowfat sour cream, for garnish
Direcciones
- Place the dry apples and cherries in a heatproof bowl and add in the boiling water.
- Let sit for 30 min.
- Heat the extra virgin olive oil in a small saucepan over medium heat.
- Add in the onion and cook till softened, about 6 min.
- Add in the diced apple and saute/fry 1 minute more.
- Deglaze the pan with the white wine and the white wine vinegar.
- Add in the dry fruit and soaking liquid to the onions and apples.
- If dry, add in a little more water.
- Add in the cayenne pepper and bring to a boil.
- Turn down to a simmer and cook for 30 min or possibly till sauce becomes a thick chutney consistency.
- Check for seasoning.
- You may want to add in more cayenne pepper to spice it up.
- Makes 2 c..
- Potato Latkes:Preheat oven to 200 degrees F.Peel and grate the potatoes and the onion.
- Place the grated potato and onion in a cloth towel and squeeze excess water from the mix.
- Place into a medium bowl and add in the flour, egg, baking pwdr, chives and season.
- Mix well to combine.
- Put the oil in a medium saucepan over medium-high heat till a thermometer reaches 340 degrees F. In small batches, drop heaping Tbsp. of the mix into the warm oil and fry, turning once, till golden brown and cooked through, about 4 to 5 min.
- Drain on paper towels to remove excess oil and keep hot in the oven till ready to eat.
- Serve Potato Latkes with the Dry Apple and Cherry Sauce and lowfat sour cream.
- You'll need a sugar thermometer to judge the temperature of the oil. After seasoning the raw potato mix, fry a tiny bit off and taste it to see if it needs more salt.
- Yield is 20 servings.
