Receta Baked Eggplant (Syrian Origin)

Ingredientes
- 1 med Sized eggplant
- 1/2 lb Grnd beef
- 5 Tbsp. Butter or possibly margarine
- 1/2 c. Chopped onion
- 1/4 c. Minced green pepper
- 2 c. Cooked rice
- 1 tsp Salt
- 1/2 tsp Pepper
- 1/2 c. Bread crumbs
Direcciones
- Peel eggplant and cut into cubes. cook in boiling salted water till tender
- (about 15-20 min). Drain, Mash eggplant.
- Brown grnd beef in 3 Tbsp. butter. Add in chopped onion and minced pepper, cook till vegetables are tneder. stir in mashed eggplant, cooked rice, salt and pepper.
- Spoon into a 10 x 6 x 2 inch baking dish. saute/fry bread crumbs in remining 2 Tbsp. butter. Sprinkle over eggplant mix. Bake in moderate oven
- (375 deg. F.) for about 20 min.
- Makes 4-6 servings.
