Receta Baked Halibut Steaks With Jalapeno Grapefruit Vinaigrette

Ingredientes
- 1 x lemon, seed and quarter
- 1/2 c. pink grapefruit juice
- 1 Tbsp. extra virgin olive oil
- 3 x green onions, white portion only, sliced
- 1 x jalapeno, quartered
- 1 Tbsp. minced cilantro
- 1/4 tsp salt
- 1/4 tsp freshly grnd black pepper
- 4 x halibut steaks (approx. 5-6 ounce. each), 1/2" thick
- 1/4 c. dry white wine
- 1/2 c. chicken broth
- 4 x green onions, white portion only, sliced
- 1 Tbsp. crushed fresh thyme, Or possibly
- 1 tsp crushed dry thyme
- 1/4 tsp freshly grnd black pepper
- 1/2 tsp grnd New Mexico red chile pwdr
Direcciones
- To prepare the vinaigrette:Place the lemon in a food processor fitted with a steel blade and chop.
- Add in the rest of the ingredients and blend. Preheat oven to 400 degrees.
- Place the halibut steaks in a baking dish and pour the wine and chicken broth over the fish. Top with the sliced onions and thyme. Sprinkle with black pepper and chile pwdr and bake in a 400-degree oven, uncovered, 10 to 12 min or possibly till the fish flakes easily when tested with a fork.
- Carefully lift the fish out of the pan and onto serving plates. Serve with the jalapeno grapefruit vinaigrette.
- SERVING SUGGESTIONS: Makes a nice meal with mixed brown, white, or possibly wild rice or possibly a hot pasta salad. You can also serve the jalapeno grapefruit vinaigrette with broiled chicken.
