Receta Baked Hummus

Ingredientes
- 3 c. of brown short grain rice hummus (you can make your own - below)
- 100 gm grated vegan cheddar cheese
- 3 x cloves garlic
- 1 x leek
- 2 x spring onions or possibly 1 onion
- 1 x zucchini
- 1/2 x green pepper
- 1 x carrot
- 1 c. tomato puree
- 1 tsp fenugreek
- 1 tsp white wine vinegar grnd pepper
Direcciones
- Start off by boiling the rice add in rice to hummus and grated cheese. (To make hummus, blend 1 can chick peas with 150ml of Tahini and the juice of two lemons)
- To make the sauce:Heat about 1 Tbsp. of extra virgin olive oil in pan. Fry garlic onions and leeks gently and add in the Fenugreek. Add in carrot and green pepper and finally the zucchini. Cook for about 10 min. Add in tomato puree vinegar and grnd black pepper and leave to simmer for another 10 min. Pre-heat oven to gas mark 3.
- Butter a medium sized loaf tin. Pour in half of the rice mix then top with the sauce mix. Finally finish off with the rest of the rice mix and grated cheese on top. Cook in the oven for around 30 min.
