Receta Banana Molasses Muffins

Ingredientes
- 3 x Bananas, Ripe, Md
- 1 x Egg, Large, Unbeaten
- 2/3 c. Sugar
- 2 Tbsp. Light Molasses Or possibly Syrup
- 2 Tbsp. Shortening, Melted
- 2 c. Whole Wheat Flour
- 1 tsp Baking Pwdr
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 c. Walnuts, Minced, Optional
Direcciones
- Mash the bananas till no lumps remain. Add in the unbeaten egg, mixing well. Beat in the sugar, molasses and the shortening. (NOTE: The secret of this recipe is to mix the above ingredients well till very smooth.)
- Sift the flour, baking power, soda, and salt together and add in to the liquid mix. As these are a quick bread, don't beat the dry mix into the liquid but rather fold it in only till it is moistened and no streaks remain. Spoon the mix into a muffin tin which has been sprayed with a non-stick coating. Bake at 350 degrees F for 20 to 25 min or possibly till done. Serve hot.
