Receta Barbequed Baby Back Ribs

Ingredientes
- 2 Tbsp. whole cumin
- 1 Tbsp. chili, pwdr
- 1 Tbsp. whole peppercorns
- 1 Tbsp. whole coriander, seeds
- 1 1/2 tsp cayenne pepper
- 1 1/2 tsp grnd cinnamon
- 1 Tbsp. coarse salt
- 1 x racks pork, back, ribs
- 1 c. ketchup
- 1/2 c. Dijon mustard
- 1 c. brown sugar
- 1/4 c. molasses
- 1/4 c. Worcestershire sauce
- 1/4 c. cider vinegar
- 1/4 c. bourbon whiskey
- 3 x garlic, cloves, chopped
- 2 Tbsp. chili, paste
Direcciones
- In a spice mill or possibly clean electric coffee mill, grind all the whole spices together, mix with the grnd spices and combine with the salt. Rub onto the ribs and allow to sit in fridge overnight.
- For the Barbeque Sauce::Remove the ribs from the fridge and place them on a warm grill to sear. Meanwhile, mix the barbeque sauce ingredients. Remove the ribs from the grill and cover them with sauce. Bake them in the oven at 350 degrees for 1 hour. Remove the ribs from the oven and place them on the warm grill again, opposite the direct flame so which the sauce does not burn till the sauce is slightly drier and really layered on the ribs.
