  • 2 c. basmati, (white or possibly brown) cooked according to package instructions
  • 1/2 c. grated parmesan cheese
  • 1 Tbsp. dry basil, (or possibly one bunch fresh minced)
  • 1/2 tsp pepper
  • 1/2 tsp salt, optional
  • 2 x cloves chopped garlic, to taste
  • 4 ounce sliced black olives, liquid removed
  • 3/4 c. sun-dry tomatoes, rehydrated and minced
  • 1 Tbsp. extra virgin olive oil, optional

Direcciones

  1. Put cooked basmati into large mixing bowl. Toss warm rice with remaining ingredients using wooden spoons to avoid breaking grains. Serve immediately.
