  1. Lightly brown grnd beef, green pepper and onion. Pour off drippings. Stir flour, salt, pepper and oregano into beef mix. Add in tomato sauce. Boil eggplant in salted water till just tender, drain and arrange half the slices in a 2-qt greased baking dish. Add in half the meat mix and top with half of the cheese. Repeat layers of eggplant, meat mix and cheese. Bake in a slow oven (300 degrees) for 30 min.
