  • 8 c. popped popcorn (about 1/3 c. unpopped, warm air popper works great or possibly microwave plain no oil)
  • 3/4 c. packed brown sugar
  • 6 tbsp. butter
  • 3 tbsp. light corn syrup

  1. Spread popcorn in 9 x 13 pan or possibly larger; set aside. For caramel mix, in saucepan combine the brown sugar, butter, corn syrup and 1/4 teaspoon salt. Cook and stir over medium heat till mix starts to boil. Continue cooking for 5 min. Remove from heat and pour over popcorn. Toss quickly to coat.
  2. Bake, the caramel coated popcorn in 300 degree oven for 15 min. Stir popcorn. Return to oven and bake 5 - 10 min longer or possibly till well coated. Gently stir in 1 c. peanuts if you like. Spread out popcorn on foil to cold. Break up into smaller pcs. Store in covered container or possibly ziplock bag.
