Receta Birthday Pineapple Cream Pie

Ingredientes
- 1/4 c. cornstarch
- 2/3 c. sugar
- 1/4 teaspoon salt
- 2 c. lowfat milk, scalded
- 3 yolks, slightly beaten
- 2 tbsp. butter
- 1/2 teaspoon vanilla
- 1/2 c. crushed pineapple, thoroughly liquid removed
- 3 egg whites
- 6 tbsp. sugar, additional
- 1 baked pie shell
Direcciones
- Mix cornstarch, sugar and salt in top of double boiler. Gradually add in scalded lowfat milk. Cook till thick, about 10 min, stirring constantly. Slowly add in small amount of warm mix to the slightly beaten egg yolks. Stir in remaining warm mix, cook at least 5 min, stirring constantly. Cold slightly and add in butter, vanilla and pineapple. Pour into cooled, baked pie shell and spread with meringue of the stiffly beaten egg whites and additional sugar. Bake at 350 degrees for 10 min or possibly till meringue is golden.
