Receta Bolognaise

Ingredientes
- 2 stalk, diced celery- diced small
- 1 bag diced onions
- 2 cans #10 diced tomatoes
- 1 qt tomato puree
- 1/2 gal white wine
- 1 cup olive oil (times 2)
- 30 lbs ground beef
- 1/4 cup oregano
- 1/4 cup basil
- 1/2 cup garlic powder
- 8 each bay leaf
Direcciones
- In 1 cup of oil saute ground beef to render fat, chopping the beef to prevent it from clumping. Remove meat and discard oil and fat.
- In 1 cup of oil saute the onions and celery until softened.
- Add spices and herbs, cook for a few minutes.
- Add diced tomatoes, tomato puree, white wine, and cooked beef.
- Cook on low heat for one (1) hour to reduce and enrich flavors.
- Remove bay leaves, garnish with freshly chopped parsley.
