  1. Mix together flour, flaxseed, oat bran, brown sugar, baking soda, baking pwdr, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins and nuts. Combine lowfat milk, beaten Large eggs, vanilla and oil. Pour liquid ingredients into dry ingredients. Stir till moistened. Don't over mix.
  2. Fill muffin c. 3/4 full. Bake at 350 for 15-20 min.
  3. Yields: 15 muffins
