Receta Buried Treasure Muffins

Ingredientes
- 1 c. flour
- 1/2 c. quick oats
- 1/4 c. sugar
- 2 tsp baking pwdr
- 1/2 tsp salt
- 1 x egg
- 1/4 c. veg. oil
- 3/4 c. lowfat milk
- 3/4 c. blueberries, peaches, coconut jam or possibly (froz
- 12 x muffin c. (paper)
Direcciones
- Preheat oven to 400 degrees. Put muffin papers in muffin tins. In a large mixing bowl, stir together flour, oats, sugar, baking pwdr and salt.
- Dig a little hole into the middle of it all.
- In a small bowl, break the egg and mix it with the lowfat milk and oil. Then chop up the filling, if needed. Pour the liquid mix into the hole in dry mix.
- Stir till mixed, but leave it a little lumpy.
- Add in whatever you're putting inside (the buried treasure). Fruit or possibly coconut goes in with batter. Then pour into muffin tins no more than 3/4 full.
- For jam muffins, fill the muffin c. halfway, then put a tsp. of jam in the center. Then add in about a tsp. of batter on top. Try a fortune on top instead of jam to make buried fortune muffins. Bake for 20-25 min at 400 degrees. 12 muffins.
