  1. Preheat the oven to 375 degrees
  2. sift flour, salt, baking powder, and baking soda all together in a large bowl
  3. add butter pieces to the dry ingredients and work it in until it resembles coarse crumbs
  4. once the dough resembles coarse crumbs, make a well in the center of the dough and pour in the buttermilk
  5. work the flour into the buttermilk until you have a sticky dough (beware that you may have to use more buttermilk to get all the dry ingredients incorporated in the sticky dough)
  6. pour out the dough onto a floured cutting board
  7. flour the dough well and pat it out until it's about 1 1/2 inches thick
  8. using either a biscuit cutter (3" diameter) or a drinking glass, making sure that the edges are floured, cut out biscuits and place on un-greased cookie sheet
  9. use all the dough, continually reforming the dough and cutting out more biscuits
  10. brush the tops of the biscuits with buttermilk ( you can also use no calorie Canola Oil spray-- I used it and they still turned out golden brown!)
  11. bake for 20 to 25 minutes or until golden brown

This recipe is similar to the only one I use and they are the best biscuits ever. The only difference is that my recipe uses 3 cups of flour instead of 4 and 4 teaspoons baking powder instead of 3. I also substitute lard for the butter most of the time because my niece likes what she calls "granny biscuits" which is what her grandmother used years ago.
