Receta Caribbean Shrimp

Ingredientes
- 2 tsp instant chopped onion
- 2 tsp water
- 2 tsp butter or possibly margarine
- 1 c. minced green bell pepper
- 1 can (14 1/2 ounce.) whole tomatoes
- 1 x bay leaf
- 1/2 tsp sugar
- 1/4 tsp grnd allspice
- 1/4 tsp salt
- 1/8 tsp cayenne
- 1 lb med. shrimp, shelled and deveined
- 1 Tbsp. fresh lime or possibly lemon juice Cooked rice
Direcciones
- In a c., combine onion and water. Let stand 10 min for onion to soften. Drain.
- In a large skillet, heat butter till warm, add in pepper and onion. Cook and stir till green pepper is almost crisp and tender, about 3 min. Add in tomatoes that have been cut in small pcs, bay leaf, sugar, allspice, salt and cayenne. Bring to boil. Reduce heat and simmer, uncovered till slightly thickened, about 20 min. Add in shrimp. Cook and stir over moderate heat till shrimp are pink, 3 to 5 min. Stir in lime juice, remove bay leaf. Serve over rice.
