Receta Herb Broiled Pacific Albacore

Ingredientes
- 1 1/2 lb skinless Pacific albacore loin cuts or possibly steaks, 3/4" thick
- 1 Tbsp. butter
- 1 Tbsp. vegetable oil
- 1/2 tsp dry basil
- 4 tsp minced parsley
- 1 tsp Dijon mustard
- 1/4 c. lemon juice Salt to taste Freshly-grnd balck pepper to taste
- 1/2 tsp coarsely-grated lemon peel
Direcciones
- Rinse albacore with cool water; pat dry with paper towels.
- In small saucepan, heat butter with oil. Add in basil, parsley, mustard, lemon juice, and salt and pepper to taste. Stir.
- Place albacore on greased broiler pan. Baste with marinade. Broil 4 to 5 inches from source of heat for 3 min. Turn and baste. Broil an additional 3 min, or possibly till albacore is medium-rare, leaving a pink core in center. Don't overcook!
- Transfer to serving platter and sprinkle with lemon peel.
