Receta Cheddar Jalapeno Cornbread

Ingredientes
- 1 c. yellow cornmeal
- 1/2 c. allpurpose flour
- 1 1/2 tsp double acting baking pwdr
- 3/4 tsp baking soda
- 3/4 tsp salt
- 1 c. grated sharp Cheddar
- 1 x fresh or possibly pickled jalapeno pepper seeded & chopped
- 2 lrg Large eggs
- 1 c. buttermilk
- 1/2 stk unsalted butter (1/4 c.)* melted & cooled

- * For a lower fat version you can substitute applesauce
- Whisk cornmeal, flour, baking pwdr & soda, salt in bowl, add in cheddar & jalapeno & toss well -In another bowl, whisk together Large eggs, buttermilk, & butter ,add in egg mix to cornmeal & stir just till combined -Spread in greased 8" square baking pan, bake at 350 for 25-30 mins, let cold 5 min
