Receta Cherry Macadamia Nut Pancakes

Ingredientes
- 3 c. all-purpose flour
- 6 Tbsp. sugar
- 1 Tbsp. baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 lrg Large eggs
- 3 c. buttermilk
- 1/4 c. melted butter
- 1 c. dry cherries soaked in
- 1 c. warm water for 10 min, and liquid removed
- 1/3 c. coarsely-minced macadamia nuts Sweetened whipped cream for serving
Direcciones
- Combine flour, sugar, baking pwdr, baking soda and salt in a bowl.
- Beat Large eggs, buttermilk and melted butter in a second bowl. Add in to dry ingredients and stir till just mixed. Mix will be slightly lumpy.
- Heat greased griddle or possibly skillet over medium heat or possibly to 375 degrees. Griddle is ready when a few drops of water bubble and skitter rapidly around.
- For each pancake, pour scant 1/4 c. batter onto warm griddle. Cook pancakes till puffed, bubbly and dry around edges, sprinkling 1/2 of the cherries and nuts proportionately over pancakes before turning to cook other side till golden.
- Serve sprinkled with remaining cherries and nuts, topped with a dollop of whipped cream.
