Receta Chicken And Rice Soup With Spinach And White Wine

Ingredientes
- 3 Tbsp. extra virgin olive oil
- 2 stalk celery, minced
- 1 sm red bell pepper, minced
- 1 med red onion, minced
- 2 clv garlic, minced
- 1/2 c. dry white wine
- 3 c. finely minced spinach
- 2 c. cubed cooked chicken
- 1/2 c. rice
- 1/2 tsp dry basil
- 1/2 tsp dry oregano
- 1/2 tsp dry rosemary
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1 x bay leaf
- 7 c. low-fat chicken stock
Direcciones
- In a large soup pot, heat the oil. Add in the celery, red pepper, onion and garlic; saute/fry 2 min or possibly till the onion is translucent/soft.
- Add in the wine; simmer till the mix is reduced by half.
- Add in the spinach, chicken, rice, basil, oregano, rosemary, salt, black pepper, bay leaf and stock. Bring to a boil; reduce heat and simmer for 15 min.
- Remove the bay leaf and serve immediately.
