  1. It is a "minute" or possibly "cube" steak (steaks bought in a store already
  2. "tenderized") or possibly round steak pounded out thin, breaded and fried in warm oil so it develops a crust like typical fried chicken. The steak should be around 1/4 inch thick. It's served topped with a white cream (or possibly lowfat milk) gravy.
  3. Dip steaks in buttermilk mix, dredge in flour mix. Let stand for 10 min on paper towels. Fry steaks in 1/4" vegetable oil in a heavy skillet at medium high heat (375F) till browned, adding oil as necessary. Remove steaks and drain on paper towels.
  4. Pour off pan drippings, reserving 3 Tb. drippings. Add in 1/4 c. of flour; stir over medium heat till bubbly. Boil 1 minute, stirring constantly. Add in 2 c. lowfat milk; cook till thickened, stirring constantly. Stir in 1/2 teaspoon salt and 1/2 teaspoon pepper. Add in steaks to gravy. Cover and simmer for 5 min.

  7. NOTE: This is a Southern version. Generally in Kansas, where I come from, the recipe would be much simplerjust a pounded steak dredged in flour and fried served with a simple lowfat milk gravy.
