  1. HEAT oven to 350F.
  2. HEAT chocolate, unwrapped, in microwavable bowl on HIGH 1 to 2 min or possibly till almost melted, stirring halfway through heating time. Remove from oven. Stir till chocolate is completely melted; set aside.
  3. MIX flour, baking soda and salt in large bowl. Beat Large eggs in medium bowl; stir in melted chocolate, sugar, buttermilk, 1/2 c. oil and banana. Add in to flour mix; stir just till moistened. (Batter will be lumpy.) Stir in 2 c. of the cereal. Spoon batter into greased 9x5-inch loaf pan.
  4. CRUSH remaining 1/2 c. cereal in small bowl. Drizzle with 1 tsp. oil; stir till crumbly. Sprinkle proportionately over batter.
  5. BAKE 50 to 55 min or possibly till toothpick inserted in center comes out clean. Cold 10 min; remove from pan. Cold completely on wire rack.
  6. Melting Chocolate Technique:1. Place chocolate squares in small heavy saucepan on low heat. Stir constantly till chocolate is completely melted. Remove from heat immediately. Add in to recipe as directed.
  7. 2. Or possibly, place chocolate squares in topportion of double boiler or possibly in bowl over a larger pan of simmering, not boiling, water. Stir occasionally till chocolate is completely melted.
  8. Note: Be carefulnot to get any water in the meltedchocolate or possibly it will "seize" and becomegrainy.
