Receta Chocolate Cherry Macaroons*

Ingredientes
- 7 ounce almond paste
- 1 c. powdered sugar
- 1/4 c. unsweetened cocoa
- 1 pch salt
- 3 x egg whites
- 1/2 c. minced almonds
- 1 c. dry cherries
- 2 ounce white chocolate for decoration
Direcciones
- Preheat oven to 350 F. In a food processor, mix almond paste, sugar, cocoa and salt till smooth. Pour in egg whites and mix thoroughly. Pulse in almonds and cherries just to blend. Drop rounded teaspoonfuls onto greased cookie sheets. Bake for 15 min or possibly till edges are set but center is still soft. Cold on racks. To decorate: Heat the white chocolate in a double boiler or possibly in a microwave. Make a zigzag design on cooled cookie and dry till it has set.
